Insoglio del cinghiale is the foundation wine of the Tenuta di Biserno in Bibbona. It is a supple and early maturing wine with a distinctive personality; it emphasizes intense fruitiness with a bouquet of ripe red berries
Blend: Syrah, Cabernet Franc, Merlot
Harvest: The grapes were harvested by hand and collected in small baskets with a capacity of 15 kilograms.
Vinification: Careful de-stemming and soft crushing followed by temperature-controlled fermentation in stainless-steel vats for approximately 21 days at 28°C; 10% of the wine undergoes malolactic fermentation in barriques, the remainder in stainless steel vats.
Ageing period in wood: 40% of the wine is aged for 4 months in new and second year French oak barrels. The rest in stainless steel tanks.
Organoleptic Analysis
Colour: Intense ruby with flecks of purple.
Nose: intensely fruity with a hint of spicy oak and liquorice.
Palate: balanced and harmonious, with the rich fruit being balanced by ripe, round tannins.
